Allium ursinum

Wild garlic is a well-known vegetable, spice and medicinal plant that grows to a height of around 20 cm to half a metre. Wild garlic is characterised by its dark green leaves, which can be up to 25 cm
long and have elongated veins running towards the tip of the leaf. During the growing season, wild garlic exudes an intense garlic-like flavour.

Although the plant is completely edible, it is mainly the leaves that are utilised. Wild garlic is suitable for fish and potato dishes, as well as light-coloured sauces and soups. It should be noted that wild
garlic is always added at the end of cooking, as heat intensifies the flavour.

TIPS FOR USE

Wild garlic can be used raw in salads, dip sauces, herb butter and pesto.
