Borage grows to a height of up to 70 centimetres. The dark green leaves are 10 to 14 centimetres long and have bristly hairs.
The leaves of borage are used in the preparation of soups and salads. Borage is an ingredient in Frankfurt green sauce. The flowers and leaves have a cucumber-like, refreshing flavour and are very suitable for smoothies.

Borage can be cooked in a similar way to spinach.
