Lemon balm grows very bushy and reaches a height of up to 50 cm. Its soft, fine leaves are slightly toothed at the edges and taper to a point. When rubbed, they develop an intense lemon scent.
Their taste is also reminiscent of the yellow tropical fruit with a pleasant spiciness. This is why it is used as a lemon substitute in fresh summer desserts and sorbets, as well as in refreshing drinks such as punch and cocktails. Lemon balm is only used fresh and adds a delicious, fresh note to light salads, sandwiches, sauces, soups, lamb, game and fish dishes, for example.
