Mugwort is a perennial and herbaceous plant that grows to a height of 60 centimetres to 2 metres. The leaves are usually 2.5 to 5 centimetres long and 2 to 3 centimetres wide. The upper side of the leaves is dark to slightly greyish-green and the underside has white felt-like hairs.
Although mugwort is an inconspicuous herb, it can be used as a spice for numerous dishes. The flavourful herb is particularly popular in winter and is used to enhance hearty dishes. Mugwort is
typically used in the traditional Christmas goose. Both fresh and dried mugwort develop their full flavour when roasting, baking or cooking.
